Did you know that when we cook and cool new potatoes, amongst other grains, it increases the content of resistant starch, which acts as a prebiotic, promoting the growth of beneficial bacteria and improving gut health. In this delicious recipe we make a creamy kefir dressing, which is a powerful probiotic, making this salad the ultimate gut healthy dish.
Ingredients
Serves 4
- 1 bag / 1kg baby potatoes - you can use a mix of purple and classic if you wish.
- 1 medium red onion, diced
- d1 small bag (8) radishes, diced
- 1/2 bunch dill, chopped
- 350g dairy or coconut kefir
- 3 tbsp extra virgin olive oil or avocado oil
- 1 tbsp Dijon mustard
- 1 tbsp red wine vinegar
- Salt and pepper, to taste

Healthier and more flavourful than a traditional mayonnaise potato salad, this easy dish is a fantastic gut healthy side dish for any season.
Potatoes
- Slice your potatoes in half.
- Boil your potatoes until they are fork tender, then drain and allow them to cool completely.
- Chop your dill, onion and radish.
Dressing
- Combine your kefir, extra virgin olive oil or avocado oil, apple cider vinegar, mustard, sea salt and pepper in a bowl.
- Add your potatoes and vegetables and gently fold until they are all evenly coated in the dressing.
- Allow your potato salad to refrigerate for at least an hour.
- Give your potato salad a quick stir before serving, garnish with more dill and taste for extra seasoning. Enjoy!
