3 Healthy Breakfast Ideas for Busy Mornings

If your days are hectic from start to finish or you always seem to be rushing out of the house in the mornings, you may often find yourself grabbing an unhealthy breakfast on your way to work or skipping breakfast altogether.

We know cooking a proper breakfast is probably the last thing you want to do before work, so why not try meal-prepping your breakfasts in advance? This is a great way to ensure you have a quick, healthy breakfast every morning and can allow you to plan your meals for work far more effectively.

These healthy breakfast ideas from POW Food can help you stay organised and get to work without rushing, worrying about what you're going to eat, or going without breakfast altogether.

Pancakes

Pancakes are a timeless classic, particularly for those with a sweet tooth - though they can, of course, be savoury too. Whether you want to have breakfast before you leave, on the go, or once you arrive at work, pancakes are a great choice. The great thing about pancakes is that they are so versatile: all you need to do to change them up is have a range of toppings at your disposal.

So, for a nice and easy weekday breakfast, make pancakes in big batches ahead of time and refrigerate or freeze them until you need them! As long as you have a few toppings handy - for example, fruit, cinnamon, low-fat cream, coconut flakes, or even syrup (in moderation) - you can have quick, healthy, and tasty breakfasts all week long.

Overnight oats

Overnight oats are one of the easiest and quickest breakfast options out there. It really is as simple as stirring together some ingredients and leaving to chill overnight. Overnight oats technically require only two ingredients: rolled oats and milk. However, many recipes also add chia seeds, yoghurt and maple syrup for extra flavour and a creamy texture.

All you have to do is mix your ingredients together in a jar - or make a big batch and split it up into several portions - and refrigerate. The oats are delicious and filling all on their own, but you can add anything from fruit and spices to seeds and jams to make them a little more exciting. It’s up to you whether you do this quick step the night before or in the morning - it works great both ways.

Yoghurt parfaits

As with overnight oats, meal prepping your breakfasts ahead of time using jars makes for quick and easy grab-and-go breakfasts. Things like yoghurt parfaits can be kept in the fridge for several days and are a healthy, quick option you can eat on the go or take with you for later.

They may sound fancy, but yoghurt parfaits are essentially just layers of yoghurt and fresh or frozen fruit topped with granola. Add the granola the night before or just before eating them if you like it crunchy.
